LAKEWOOD, OH — After a 20-year culinary journey in the world of pizza making, Joe Schlott is about to experience a dream come true.

The owners of Gray House Pie are thrilled to finally open Gray House Pizza tomorrow at 14201 Madison Avenue in Lakewood.

“I’m totally thrilled,” Schrott said. “I’ve been messing around with pizza for decades and nailing it.”

Sure, he was good at New York-style pizza some time ago, but a chance visit to the Motor City opened his eyes and expanded his taste buds to the world of Detroit-style pizza.

“I had no idea what it was, other than it was just a square pizza which I thought was pretty cool,” Schrott said. “Then I started doing my homework. For the past eight years, I’ve been working on creating Detroit style.

“I made it for the first time about five years ago. I took one bite and it was a religious experience. I couldn’t believe it was so good. I was hooked. , started serving in pie shops about four years ago.”

Located in a former 1,300-square-foot pizzeria, Gray House Pizza offers a simple menu of pepperoni, hot sausage, green peppers, roasted peppers, onions, black and green olives, mushrooms, jalapenos, banana peppers, and pineapple. doing.

There are also freshly baked cookies – brown butter, sea salt and chocolate chips.

Schlott said the idea of ​​opening his first pizza shop in Lakewood was pretty straightforward.

“Lakewood is full of adventurous people,” Schrott said. “They love good food. They know great food and they seek it out.”

Lakewood better get ready for schlotte who has big ideas to serve those eaters.

Not only will he open an additional Gray House Pie store at 18103 Detroit Avenue, but he will also add a side business, UK Pies & Fries, behind Gray House Pizza.

The latter has a walk-up window and serves 20 different pub pies and freshly cut French fries on Brown Avenue. Both stores are scheduled to open until the end of February.

As for pizza lovers who have never tried Detroit-style pizza, Schrott promises mouth-watering results.

“Especially if it’s Detroit style, you really get the sauce and the crispy cheese pieces,” Schrott said. “It’s a whole different experience.”
